SPICED PEAR & CASHEW CREAM SMOOTHIE

Pears are one of my favourite autumn fruits, and they're packed with phytonutrients, vitamins & minerals. The skins of pears contain an incredibly high amount of phenolic acids & flavanoids - the antioxidants that are best known in relation to cancer prevention due to their anti-oxidant and immune supportive activity. Flavanoids have also been shown to improve insulin sensitivity to help blood sugar regulation, so combined with their high fibre content, pears are a great choice for blood sugar regulation.

You need to use really ripe pears for this smoothie - hard or unripened pears can be tart, astringent or bitter. You can also use stewed or baked pears.

Ingredients

  • 3 (or 2 large) very ripe yellow pears, skin on
  • 1 frozen banana
  • 1 medjool date
  • 1/4 tsp ground cardamom (or a pinch of nutmeg if you don't have cardamom)
  • 1/2 tsp cinnamon
  • 1/2 cup cashews, soaked overnight
  • 1 scoop plant based vanilla protein powder
  • 2 cups water

Directions

  1. Add the water and cashews to your blender and blend on high for at least a minute, or until the cashews are smooth and incorporated.
  2. Add the remaining ingredients to the blender and process until smooth.
  3. Enjoy immediately!
